Bacon-wrapped dates (stuffed with cream cheese)

I can be a bit of a picky eater due to food texture issues, so when a good friend of mine made this recipe, it took me a bit to even try it… but it was love at first bite!

This is now a staple at my friends’ semi-regular potlucks and most any gathering that calls for an appetizer or finger food (heck, with the sweetness of the dates plus the smoothness of the cream cheese, I would count them as a bacon-wrapped dessert!

  • 24 pitted dates
  • 12 slices of bacon cut in half
  • 1/4 cup of cream cheese (or as much as you want to try to shove in the middle of a date)

First, preheat your oven to 400°F (Google tells me that’s 204°C). While the oven preheats, slit each date and stuff it with cream cheese (depending on the size of your dates, this might be 1/2 of a teaspoon or more). Cut each bacon strip in half to make two shorter pieces of bacon so you have one small strip per date. Wrap each stuffed date with the short piece of bacon, overlapping the ends to help it seal, then place on a baking sheet. Bake for 20 minutes or when the bacon is crisp. Serve immediately I would try to make sure that they aren’t stacked, as sometimes they’ll stick to each other.

Sadly, I don’t have a picture of them as they get devoured too quickly! You can also use different kinds of cheese or fillers for the dates, but I haven’t gotten that adventurous yet.

    Hmmmm. I recently purchased a container of pitted dates. It was one of those whimsical purchases, with no paricular reasoning. Now I know why. Purchase of the bacon and cream cheese will take place tomorrow. And then I’ll await guidance as to where they ought to be delivered.
