Taco Soup —

I’m taking a mental health day, so I’m going to share a recipe that Veronica makes in the crock pot from time to time which is delicious and couldn’t be any easier: taco soup.Taco Soup

  • 1 pound ground beef or turkey, browned and drained
  • 1 can of black beans
  • 1 can of the beans of your choice (I love white beans, but V loves pinto beans)
  • 1 can of original Ro-Tel
  • 1 or 2 cans of corn (shoepeg, if you can find it)
  • 1 28 oz. can of petite diced tomatoes
  • 2 packets of Ranch dressing mix
  • 1 packet of taco seasoning mix (we like the cheesy taco variety)
  • Salt, pepper and garlic powder to taste

Empty all the cans into the crock pot. Do not drain anything!!! Add your browned meat and seasoning packets. Mix well. Add salt, pepper and garlic to taste. Cook for four hours on low or two hours on high. If you like your soup a little thinner, add one can of tomato soup. If you prefer it more like stew, use a potato masher on it and the beans will act as a thickener. Serve with shredded cheese, sour cream and tortilla chips. Also delicious with corn bread.

This recipe is incredibly simple and makes your house smell amazing.

    I make this all the time too, but to make it even easier (I hate browning meat to use in the crock pot), I add 2 cans of chunk chicken breast. Also I use 1 can of sweet corn kernels and 1 can of white hominy for the different textures.
