Casey’s super-easy no-lettuce salad
A friend of mine made this salad at a get-together and I was in love with it. I asked for the recipe … and it’s a lot of fun to play with! You can add or subtract things (the version I ate had small chunks of bacon) and it’s a really great way to play with your food.
You’ll want a dish with a lid where you can toss ingredients in, seal the lid, and shake it around to get everything mixed up ….you could even be silly and mix it to the KC and the Sunshine Band’s “Shake Your Booty” for extra fun.
- 20 oz. frozen (thawed) or canned corn (I usually use one can yellow and one can white)
- 20 oz. frozen (thawed) or canned peas (I prefer early June or baby peas)
- 1 medium tomato diced
- Diced red onion to taste
- 2 tbsp (or to taste) mayonnaise
- 2 tbsp lime juice
- 2 tbsp finely-chopped basil
- Salt and pepper to taste
- Shake that sucker up.
