Chicken Pasta Salad for the Weak and Feeble

Oh look, it’s another Memorial Day weekend!

Perhaps you’ve been in your car for ten hours already with another five to go until you reach your destination. Or maybe you’ve already arrived at the dark comedy of disaster that is your family picnic and you are currently all raising your glasses to the death of all your enemies.

No matter, wherever you go this weekend, there will be food and drink and at least one insufferable member of your gathering who will blight the festivities and help the degrees of agony increase exponentially. Also, someone will ask you to bring a side dish.

Never the main course, just the “sides.”

So when your invite to that new Olympic-size pool depends on you showing up with food, I’ve got you covered.

Pasta salad.

NO ONE can screw up pasta salad.

Here is what you do…

Chicken Pasta Salad for the Weak and Feeble

  • 24 oz. of tri-colored pasta, cooked and cooled.
  • 1 lb. of chicken cooked and diced up into little cubes (doesn’t have to be pretty, just hack it up people)
  • 1 clove of minced garlic or a teaspoon of garlic powder (depending on enthusiasm level)
  • ¼ tsp. of lemon pepper
  • 4 oz. of feta cheese crumbles
  • 1 can of chic peas or cannelli beans
  • 1 cup grape tomatoes (halved)
  • 1 diced yellow pepper
  • 1 diced orange pepper
  • ½ cup dried cranberries
  • ½ cup cilantro (be careful of this one — some people HATE it)
  • Half a cucumber, diced

Lightly dress with vinegar and oil mixed with whatever spice you think might be universally popular… and voilà! Get your suits, pass the tanning butter and get ready for the gatekeeper to lift the curtain. You’re IN!

    Sounds delicious. Of course, cilantro is a staple at Casa Twistie.

    Me? I always bring dessert. Funny how one is always popular when one bakes really well.
